Crockpot Chicken Taco Chili

I am all about Taco Tuesdays and I'm always looking for festive new recipes to add to my recipe arsenal. This past week was another successful new recipe and I just had to share.

With fall coming soon, I've started to pull out a soup recipe or two. This recipe for Chicken Taco Chili will be a definite go to. I found the original recipe at Table for Two. You'll see that I changed things up a bit, only because I used things that I already had in the house.

If you're looking for something super easy and super good, pull out your crockpot and come along with me.

Chicken Taco Chili

Ingredients:
1 16oz can black beans, drained and rinsed
1 16oz can red beans
1 16oz can tomato sauce
12 oz bag of frozen corn
1 can fire roasted tomatoes
1 packet low sodium taco seasoning
1/2tbsp ground cumin
1/2tbsp chili powder
1c. low fat sour cream
1/2 cup shredded sharp cheddar cheese, plus some for garnish
3 frozen, boneless, skinless chicken breasts

Mix together all ingredients in the crockpot, minus the chicken breast.

Place the chicken on top of the vegetable mixture and push down until the pieces are covered. This ensures that they get cooked through without drying out.

Set your crockpot on high and allow to cook 8-10 hours.

Remove the chicken breast and shred or dice. Return it to the soup and mix. Add in the sour cream and cheese. Mix well allowing the cheese to melt.

Top with extra sour cream and cheese if you'd like.

This was a full meal in itself, but I'm sure some type of garlic bread or grilled cheese would pair nicely as well. Enjoy!

Tasty Tuesday: Taco Pasta Bake

Taco Tuesday is huge at our house and I do my best to introduce new recipes on a regular basis. Over the weekend I decided to try one of my pins to see if it would be suitable for one of our favorite nights of the week.

This pasta dish is simple and oh so good. You can find the original recipe here. Here's how it happened at my house...

Ingredients:
1lb ground beef
1pkg. Taco seasoning (low sodium)
4 oz cream cheese (low fat), cubed
1c. Shredded Mexican cheese
1c. Water
12oz. dry ziti

Directions:
Preheat the oven to 350.
Brown and drain the beef.

Cook the pasta according to package directions.

Mix in the water and taco seasoning with the beef. Heat on medium for 5 minutes and add the cream cheese. Once the cream cheese is melted add 1/2 of the shredded cheese.

Spread the drained pasta in a 9×13 pan. Pour the meat mixture over the pasta and toss together.


Sprinkle the remaining cheese on top. Bake for 20 minutes. 


Enjoy! This would pair nicely with a salad.  We did fresh fruit.


Even the itty bitty enjoyed it.

Five on Friday: TGIF

These past two weeks have been a bit crazy! Between the snow, teething and grown-up odds and ends, I'm grateful to thank God for it being Friday. Join me and others like Darci for this week's Five on Friday!

Besides not having our computer functioning last week, we also said goodbye to our water heater. Of course it would have gone out the coldest, snowiest week this winter. I briefly discussed this week previously and I was not sorry to see that week go. Over the weekend we got our new water heater! Yay! The things that we get excited about as adults...


 
 
[two]
Taco Tuesdays are always a big hit at our house and I do my best to come up with new takes on some of our favorites. This week I made a super simple Enchilada Chicken with Cheesy Enchilada Rice. Think of it as healthier Chicken Enchiladas deconstructed.
 
 
 
[three]
A couple weeks ago we began the Winter Reading program at our local library. G met her first goal and received her free book and her free vanilla cone. That will be a great treat for her first birthday in April.
 
 
[four]
Speaking of G, she turned 10 months old this week! I cannot believe how big she has gotten. Time is flying!
 
 
[five]
I've been teaching about President's Day, Abraham Lincoln, and George Washington this week. To celebrate the holiday (a few days late) and all that we've been learning, we'll enjoy Patriotic Parfaits (similar to these)! I'll be using strawberries, blueberries and vanilla yogurt in layers to form the Red, White and Blue.
