You'll need:
4 pieces of crisp, chopped bacon
1tbsp Maple flavoring (add more if you'd like)
2c flour
2c milk
1tbsp sugar
1/4c oil
2 eggs
4tsp baking powder
Have your waffle iron heating. Begin by whisking the eggs in a medium sized mixing bowl.
Add the milk and maple flavoring and mix.
Slowly stir in the remaining ingredients (it helps to mix the dry ingredients in a small bowl and then add).
Side note: This is a great task for the kids. Meal time becomes that much more meaningful when they are included in the cooking process.
Spoon a scant 2/3c (this is a general amount depending on the size of your waffle iron) onto your waffle iron and "bake". These are super filling and so delicious!

In other news, I've had the Christmas spirit for quite a while. Normally I refuse to listen to Christmas music or put up any decorations until after Thanksgiving. This year however, the urge came on strong extra early. Maybe it's because it will be G's first Christmas. Maybe it's because this year has marked the one year anniversary of the passing of my dad and grandpa. Maybe it's because seeing my little girl look at the twinkly lights melts my heart and I just have to do whatever it takes to see her smile. Thus, our Christmas tree has made its way into the living room. It is currently undecorated, but that will come in time. I do have presents under the tree (go me!). I realized upon pulling out decorations, that my ribbon and tree topper are missing...not long after G was born, my husband and in-laws took it upon themselves to "clean up" the basement. All of this is appreciated, however, I cannot find anything! My husband is certain they are down there "somewhere"...let us hope so.
And the highlight of my day...my precious little girl turned 7 months old today! I cannot believe how much she has changed over the last month. While she has reached many milestones over the last few months, we are in awe of how evident some of these changes have become over the last month. I cannot express the amount of love I have for our little miracle.
